Monitoring of the Brewing Process with GC-MS

Reference Number: lpss-277

Overview

The journey from raw materials to a finished pint involves a series of complex chemical transformations, where each stage of brewing—from boiling the wort to fermentation and maturation—fundamentally alters the product’s aroma and flavor. Monitoring these changes is critical for process optimization and ensuring the consistency of the final beer.

In this study, researchers utilized Gas Chromatography coupled with Time-of-Flight Mass Spectrometry (GC-TOFMS) to screen the volatile and semi-volatile profiles across five key points in the brewing cycle. By employing headspace solid phase micro-extraction (HS-SPME) for automated sample concentration, hundreds of analytes were detected. The high-speed deconvolution capabilities of the Pegasus BT allowed for the identification of co-eluting peaks, such as the simultaneous increase of furfuryl ethyl ether and the decrease of furfuryl alcohol during fermentation. This detailed chemical mapping provides brewers with the insights needed to understand how specific interventions impact the final aroma profile.
