Characterization and Comparison of Basil Before and After Drying

Reference Number: lpss-315

Overview

The sensory profile of culinary herbs like basil undergoes dramatic changes during the drying and curing process. Understanding these transformations is essential for quality control and product development in the food and spice industries. While gas chromatography and mass spectrometry are standard for characterization, the extreme complexity of herb matrices often leads to co-eluting peaks that obscure individual aroma-contributing compounds.

In this study, researchers compared fresh and cured basil using comprehensive two-dimensional gas chromatography (GCxGC) coupled with time-of-flight mass spectrometry (TOFMS). This approach dramatically increased peak capacity, resolving analytes that were otherwise hidden in one-dimensional GC data.

By utilizing ChromaTOF Tile software to highlight statistical differences, the team identified key markers—such as specific terpenes and phenylpropanoids—that distinguish the two states. Additionally, the TGM800 was employed to provide precise moisture determination, offering a complete picture of the chemical and physical changes associated with the curing process.
