Esta publicaci\u00f3n del blog abordar\u00e1 la determinaci\u00f3n de prote\u00edna total, mientras que la segunda examinar\u00e1 la determinaci\u00f3n de NPN (nitr\u00f3geno no proteico) y NCN (nitr\u00f3geno no caseico).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Desde finales del siglo XIX, el m\u00e9todo de determinaci\u00f3n de prote\u00ednas de Kjeldahl ha sido un m\u00e9todo ampliamente utilizado para determinar la concentraci\u00f3n de nitr\u00f3geno\/prote\u00ednas en muestras de alimentos. A pesar de sus desventajas (largos tiempos de an\u00e1lisis, altos costos, problemas de seguridad y preocupaciones sobre la recuperaci\u00f3n), sigui\u00f3 siendo el est\u00e1ndar en los laboratorios de alimentos hasta principios de la d\u00e9cada de 1990. Desde entonces, el m\u00e9todo de combusti\u00f3n de Dumas ha recuperado relevancia en el campo. Numerosas pruebas de comparaci\u00f3n han demostrado que los resultados son comparables en t\u00e9rminos de exactitud y precisi\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En LECO, fabricamos instrumentos Dumas que utilizan el m\u00e9todo de al\u00edcuota con volumen de lastre. La muestra se quema en ox\u00edgeno puro, y todos los gases de combusti\u00f3n se recogen en un volumen de lastre. Una al\u00edcuota de 3 a 10 cm es impulsada a trav\u00e9s del sistema por un gas portador inerte (Ar o He) y analizada mediante un detector de conductividad t\u00e9rmica (TCD). El m\u00e9todo Dumas ofrece ventajas como mayor rapidez, menor costo por an\u00e1lisis, mayor seguridad para el medio ambiente y los t\u00e9cnicos, y una automatizaci\u00f3n
