Su aroma depende del origen del cacao y de los procesos de elaboraci\u00f3n, como la fermentaci\u00f3n y el tueste, los cuales configuran el perfil vol\u00e1til que tus papilas gustativas perciben como \u201ca nuez\u201d, \u201ctostado\u201d, \u201cafrutado\u201d, \u201cfloral\u201d o \u201cespeciado\u201d.\u201d<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">El desaf\u00edo anal\u00edtico: Coeluci\u00f3n<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">La fracci\u00f3n vol\u00e1til del cacao puede abarcar cientos de compuestos de diversas clases qu\u00edmicas y un amplio rango de concentraciones. Dicha complejidad aumenta la probabilidad de coeluci\u00f3n en la GC unidimensional, donde los contribuyentes importantes pueden quedar ocultos. El objetivo no es simplemente obtener m\u00e1s picos, sino una mejor separaci\u00f3n y una identificaci\u00f3n confiable de los compuestos que impulsan la percepci\u00f3n sensorial.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Un flujo de trabajo LECO para el cacao y el chocolate utilizando GCxGC<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">En nuestra nota de aplicaci\u00f3n, \u201c<a href=\"https:\/\/www.leco.com\/es\/documentos\/203-821-718\/\" data-type=\"document\" data-id=\"1855\">Comparaci\u00f3n entre Cocoa y Pegasus BTX 4D y Sync 2D<\/a>\u201clas muestras de licor de cacao de diferentes or\u00edgenes geogr\u00e1ficos se caracterizan mediante cromatograf\u00eda de gases bidimensional comprensiva acoplada a espectrometr\u00eda de masas de tiempo de vuelo (GCxGC-TOFMS).
