Pour de nombreux amateurs de vin, la science reste invisible.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c0 <em>La chimie du vin<\/em>, lors d&#x27;une d\u00e9gustation organis\u00e9e conjointement par LECO et le Lake Michigan College, la science est sortie des laboratoires pour s&#x27;inviter dans les verres. Les invit\u00e9s ont d\u00e9gust\u00e9 des vins produits localement tout en d\u00e9couvrant comment la chimie permet d&#x27;expliquer ce que nous sentons, go\u00fbtons et Cette r\u00e9gion de 1,3 million d\u2019acres, situ\u00e9e dans le sud-ouest du Michigan, repr\u00e9sente plus de 80% de la production totale de raisin de l\u2019\u00c9tat. Situ\u00e9e \u00e0 42 degr\u00e9s de latitude nord, la <a href=\"https:\/\/michigan.guides.winefolly.com\/regions\/lake-michigan-shore\/\" target=\"_blank\" rel=\"noopener\">Lake Michigan Shore AVA<\/a> est g\u00e9ographiquement similaire aux c\u00e9l\u00e8bres r\u00e9gions viticoles d'Europe, notamment la France, l'Allemagne et l'Espagne. Les sols glaciaires et \u201c l'effet de lac \u201d contribuent \u00e0 une r\u00e9gion agricole extr\u00eamement productive.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Desservant une grande partie de cette m\u00eame zone, <a href=\"https:\/\/www.lakemichigancollege.edu\/\" data-type=\"link\" data-id=\"https:\/\/www.lakemichigancollege.edu\/\" target=\"_blank\" rel=\"noopener\">Lake Michigan College<\/a> (LMC) est un coll\u00e8ge communautaire public local, situ\u00e9 dans la ville voisine de Benton Harbor, dans le Michigan. Parmi ses nombreux programmes et services communautaires, LMC abrite la seule cave vinicole d'enseignement du Midwest, le <a href=\"https:\/\/lakemichiganvintners.com\/\" data-type=\"link\" data-id=\"https:\/\/lakemichiganvintners.com\/\" target=\"_blank\" rel=\"noopener\">Lake Michigan Vintners<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gr\u00e2ce \u00e0 leur <a href=\"https:\/\/www.lakemichigancollege.edu\/academics\/culinary-wineviticulture\/wine-and-viticulture\" data-type=\"link\" data-id=\"https:\/\/www.lakemichigancollege.edu\/academics\/culinary-wineviticulture\/wine-and-viticulture\" target=\"_blank\" rel=\"noopener\">Fili\u00e8re \u00ab Technologie du vin et de la viticulture \u00bb<\/a>, les \u00e9tudiants acqui\u00e8rent une exp\u00e9rience pratique de l&#x27;ensemble du processus de vinification \u2014 depuis la r\u00e9colte des raisins dans les vignobles voisins jusqu&#x27;\u00e0 la mise en bouteille et le service, en passant par le foulage et l&#x27;\u00e9levage \u2014 au sein d&#x27;un domaine viticole et d&#x27;une salle de d\u00e9gustation enti\u00e8rement op\u00e9rationnels.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\">D\u00e9veloppement de la chimie complexe<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chaque d\u00e9cision prise au cours du processus de vinification a une incidence sur le produit final, et les instruments LECO accompagnent les vignerons \u00e0 chaque \u00e9tape. La d\u00e9termination pr\u00e9cise de la teneur en humidit\u00e9 constitue \u00e9galement un facteur d\u00e9terminant pour l&#x27;\u00e9valuation de divers composants du sol pr\u00e9sentant un int\u00e9r\u00eat analytique. Dans le vignoble, les d\u00e9cisions relatives \u00e0 l&#x27;humidit\u00e9 et \u00e0 l&#x27;irrigation ont un impact sur la sant\u00e9 et la croissance des raisins, qui constituent la base du d\u00e9veloppement des ar\u00f4mes.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\">D\u00e9velopper les saveurs<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le raisin et le vin contiennent des centaines de compos\u00e9s chimiques appel\u00e9s analytes. Les outils analytiques, en particulier la chromatographie en phase gazeuse coupl\u00e9e \u00e0 la spectrom\u00e9trie de masse (GC-MS), mesurent ces analytes pour mieux comprendre les caract\u00e9ristiques et la composition chimique d'un \u00e9chantillon. Les analytes commencent \u00e0 se d\u00e9velopper dans le vignoble et continuent de se former tout au long du processus de vinification, les variations \u00e0 chaque \u00e9tape conduisant \u00e0 des m\u00e9langes d'analytes diff\u00e9rents selon les vins. \u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">D\u00e8s la r\u00e9colte des raisins, leur composition chimique commence \u00e0 \u00e9voluer. Les raisins contiennent de nombreux compos\u00e9s, notamment des terp\u00e8nes, qui constituent l\u2019un des types de compos\u00e9s contribuant \u00e0 l\u2019ar\u00f4me. Le foulage lib\u00e8re le jus, exposant ainsi les compos\u00e9s \u00e0 l\u2019oxyg\u00e8ne et d\u00e9clenchant des r\u00e9actions enzymatiques. L&#x27;ajout de levures d\u00e9clenche la fermentation des jus, qui transforme les sucres en alcool et g\u00e9n\u00e8re de nouvelles combinaisons d&#x27;analytes par le biais d&#x27;autres r\u00e9actions. De nombreux esters (un autre type d&#x27;analyte contribuant \u00e0 l&#x27;ar\u00f4me) se forment au cours de la fermentation. Le vieillissement ralentit la fermentation et permet aux ar\u00f4mes de se d\u00e9velopper, tout en apportant potentiellement de nouveaux analytes au vin provenant des f\u00fbts et des m\u00e9thodes de conservation.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les ar\u00f4mes du vin ne cessent d&#x27;\u00e9voluer, m\u00eame apr\u00e8s la mise en bouteille. Les compos\u00e9s analys\u00e9s continuent de r\u00e9agir lentement, modifiant sans cesse les caract\u00e9ristiques du vin. pr\u00e9sent\u00e9es dans le diagramme \u00e0 barres aux c\u00f4t\u00e9s des chromatogrammes de chacun des vins. Certaines des notes aromatiques les plus choisies sont communes aux deux vins blancs (comme la pomme, la poire et les agrumes), tandis que d'autres notes aromatiques sont plus distinctes entre les vins (comme le p\u00e9trole pour le Riesling et la banane, les notes tropicales et herbac\u00e9es pour le Sauvignon Blanc). <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lors de la comparaison des donn\u00e9es chimiques du Riesling et du Sauvignon Blanc, les chromatogrammes se ressemblent beaucoup, mais de nombreuses diff\u00e9rences ont \u00e9galement \u00e9t\u00e9 observ\u00e9es. Les esters qui se chevauchent sont associ\u00e9s \u00e0 certaines de ces notes communes de fruit, de pomme et de poire. Les terp\u00e8nes contribuent \u00e0 certaines notes d'agrumes, herbac\u00e9es et florales.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un analyte unique au vin Riesling est le TDN (1,1,6-trim\u00e9thyl-1,2-dihydronaphtal\u00e8ne). Cet analyte est connu pour procurer un ar\u00f4me distinct de \u201c p\u00e9trole \u201d. \u00c0 mesure que les vins Riesling vieillissent, cet ar\u00f4me continue de se d\u00e9velopper et devient plus perceptible. \u00c0 un jeune \u201c \u00e2ge \u201d, il peut \u00eatre plus difficile \u00e0 percevoir car le TDN peut ne pas s'\u00eatre accumul\u00e9 \u00e0 un niveau suffisamment \u00e9lev\u00e9, mais notre syst\u00e8me GC-MS a facilement d\u00e9tect\u00e9 l'analyte, et nombre de nos participants ont identifi\u00e9 son ar\u00f4me.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les participants ont \u00e9galement identifi\u00e9 des notes aromatiques plus herbac\u00e9es, tropicales et de banane dans le Sauvignon Blanc par rapport au Riesling. Les notes de d\u00e9gustation du public pour ces vins \u00e9taient \u00e9galement assez similaires. Par exemple, les participants ont tr\u00e8s majoritairement identifi\u00e9 des ar\u00f4mes communs : cerise, baies, terreux, ch\u00eane\/bois\u00e9 et \u00e9pic\u00e9.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les notes de cerise et de fruits rouges de ces vins \u00e9taient nettement diff\u00e9rentes de celles du Riesling et du Sauvignon Blanc, qui ont \u00e9t\u00e9 d\u00e9crites comme \u00e9tant davantage ax\u00e9es sur la pomme et la poire. Ces types de diff\u00e9rences sont probablement associ\u00e9s \u00e0 diff\u00e9rentes combinaisons d'esters dans les vins. Par exemple, plusieurs esters qui ont \u00e9t\u00e9 observ\u00e9s \u00e0 des niveaux plus \u00e9lev\u00e9s dans les vins rouges sont pr\u00e9sent\u00e9s ici. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une analyse approfondie nous permet \u00e9galement d'identifier les lactones de whisky et de ch\u00eane qui sont associ\u00e9es aux f\u00fbts de ch\u00eane et sont uniques aux vins rouges. Celles-ci sont observ\u00e9es \u00e0 des niveaux nettement plus \u00e9lev\u00e9s dans le Merlot, mais sont \u00e9galement pr\u00e9sentes dans le Red Hawk Red.
