Para muitos apreciadores de vinho, a ci\u00eancia permanece invis\u00edvel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Em <em>A Qu\u00edmica do Vinho<\/em>, em um evento de degusta\u00e7\u00e3o organizado em parceria pela LECO e pela Lake Michigan College, a ci\u00eancia saiu do laborat\u00f3rio e chegou \u00e0 ta\u00e7a. Os convidados degustaram vinhos produzidos localmente enquanto aprendiam como a qu\u00edmica ajuda a explicar o que cheiramos, provamos e apreciamos.<\/p>\n\n\n\n<figure gr\u00e1fico de barras ao lado dos cromatogramas de cada um dos vinhos. Algumas das notas arom\u00e1ticas mais selecionadas s\u00e3o comuns a ambos os vinhos brancos (como ma\u00e7\u00e3, pera e frutas c\u00edtricas), enquanto outras notas arom\u00e1ticas s\u00e3o mais distintas entre os vinhos (como querosene para o Riesling e banana, tropical e herb\u00e1ceo para o Sauvignon Blanc). <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ao comparar os dados qu\u00edmicos de Riesling e Sauvignon Blanc, os cromatogramas parecem muito semelhantes, mas muitas diferen\u00e7as tamb\u00e9m foram observadas. \u00c9steres sobrepostos est\u00e3o associados a algumas dessas notas comuns de frutas, ma\u00e7\u00e3 e pera. Os terpenos contribuem para algumas das notas c\u00edtricas, herb\u00e1ceas e florais.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Um analito exclusivo do vinho Riesling \u00e9 o TDN (1,1,6-trimetil-1,2-dihidronaftaleno). Sabe-se que esse analito confere um aroma distinto de \u201cquerosene\u201d. Conforme os vinhos Riesling envelhecem, esse analito continua a se desenvolver, e esse aroma torna-se mais percept\u00edvel. Em uma \u201cidade\u201d jovem, pode ser mais dif\u00edcil de perceber, pois o TDN pode n\u00e3o ter se acumulado em um n\u00edvel alto o suficiente \u2014 mas nosso sistema GC-MS determinou facilmente o analito, e muitos de nossos participantes identificaram seu aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Os participantes tamb\u00e9m identificaram mais notas de aroma herb\u00e1ceo, tropical e de banana no Sauvignon Blanc em compara\u00e7\u00e3o com o Riesling. Essas lactonas s\u00e3o observadas em n\u00edveis notavelmente mais elevados no Merlot, mas tamb\u00e9m est\u00e3o presentes no Red Hawk Red.
