Comparison of Dried Thyme Aroma Profiles by Geographical Origin

Reference Number: lhf-asms24-lpss-323

Overview

Characterizing the aroma-contributing compounds in natural products like dried thyme is essential for quality control, authentication, and product development in the flavor and food industries. Because thyme’s chemical profile is heavily influenced by its geographical origin, identifying the specific volatile and semi-volatile analytes that differentiate one variety from another requires high-sensitivity analytical tools.

In this study, researchers compared dried thyme samples from France, Morocco, Poland, and Spain using the Pegasus BTX gas chromatograph time-of-flight mass spectrometer (GC-TOFMS). This system provides the full mass range acquisition and deconvolution power necessary to uncover hundreds of individual components within the complex herb matrix.

To manage the resulting data, ChromaTOF Sync software was used to align peaks and compile analyte information across the entire sample set. This allowed for the rapid identification of differentiating features, such as the varied levels of thymol and carvacrol, and the presence of nitrogen-containing compounds with nutty notes. This integrated workflow offers an efficient way to characterize natural product similarities and differences, ensuring consistency and quality in the global spice trade.
